Roasted chickpeas are one of my favorite snacks. I will roast up a couple of cans and snack on them all week! Bring them to work, keep them in your center console of you car, share with the kids if you’re feeling nice. Chickpeas are full of vitamins and nutrients and if I can make them in a crispy crunchy delicious form, then YES sign me up!
1 can of chickpeas, drained and rinsed
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
pinch of cayenne if you’re feeling spicy
Toss all of the ingredients in a plastic baggie, dump them out on to a lined baking sheet and pop in the oven at 400 degrees. I roast them for 20 minutes then toss them around and roast for another 10. Just keep an eye on them because everyone’s oven is different. They can crisp up quicker or slower than 30 minutes.
Remove and let them cool
Store in a mason jar or ziplock baggie. These will stay fresh for about a week. But you will devour them long before then!
